Balsamic Black Rice with Crispy Tofu

Ingredients

  • Black rice: 1 1/2 cup cooked rice
  • Shallots: 2 finely chopped
  • Cherry tomatoes: 1C
  • Kale: 2 C
  • Red chilly: 1 minced
  • Balsamic vinegar: 1 T
  • Soya sauce/Tamari/ liquid aminos: 1 T
  • Sugar/xylitol: 1/2 T
  • Olive oil: 1 T
  • Salt to taste

Preparation

  1. Heat olive oil in a pan and add shallots and a pinch of salt

  2. When shallots begin to caramelise add tomatoes, red chilly, balsamic vinegar, soya sauce and xylitol

  3. Cook stirring till tomatoes burst open

  4. Stir in rice and kale and mix well till kale softens
