Colorful Black Bean Falafel Bowl
Ingredients
Black bean falafel
- 1 large onion, diced (~200g)
- 3 cloves garlic, minced
- 2 large carrots, diced (~200g)
- 1 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp chili powder
- 1/4 tsp cayenne
- 1/2 tsp black pepper
- 1 tsp salt
- 1 1/2 cups (400g) cooked black beans
- 1/2 cup (40g) rolled oats
- 1/4 cup (30g) chickpea flour
Tahini dressing
- 1/4 cup tahini
- 1/4 cup hot water
- 1 tbsp lemon juice
- 1 tbsp sriracha
- 2 tsp maple syrup
- salt & pepper to taste
Preparation
In a frying pan, saute the onion, garlic, and carrots for 5-6 minutes.
Add in the spices and incorporate well.
Once fragrant, transfer the mixture to a food processor along with the remaining ingredients.
Pulse into a homogeneous mixture, then roll into balls using your hands.
Cook in a greased pan on medium heat or bake at 350°F for 25 min until browned, flipping halfway.
For the tahini dressing, mix 1/4 cup tahini, 1/4 cup hot water, 1 tbsp lemon juice, 1 tbsp sriracha, 2 tsp maple syrup, salt & pepper to taste.
Assemble the bowl with corn, chickpeas, sweet peppers, spinach, cucumber, cherry tomatoes, add the black bean falafel balls, and drizzle with tahini dressing.
