Colorful Black Bean Falafel Bowl

Ingredients

Black bean falafel

  • 1 large onion, diced (~200g)
  • 3 cloves garlic, minced
  • 2 large carrots, diced (~200g)
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 1/2 cups (400g) cooked black beans
  • 1/2 cup (40g) rolled oats
  • 1/4 cup (30g) chickpea flour

Tahini dressing

  • 1/4 cup tahini
  • 1/4 cup hot water
  • 1 tbsp lemon juice
  • 1 tbsp sriracha
  • 2 tsp maple syrup
  • salt & pepper to taste

Preparation

  1. In a frying pan, saute the onion, garlic, and carrots for 5-6 minutes.

  2. Add in the spices and incorporate well.

  3. Once fragrant, transfer the mixture to a food processor along with the remaining ingredients.

  4. Pulse into a homogeneous mixture, then roll into balls using your hands.

  5. Cook in a greased pan on medium heat or bake at 350°F for 25 min until browned, flipping halfway.

  6. For the tahini dressing, mix 1/4 cup tahini, 1/4 cup hot water, 1 tbsp lemon juice, 1 tbsp sriracha, 2 tsp maple syrup, salt & pepper to taste.

  7. Assemble the bowl with corn, chickpeas, sweet peppers, spinach, cucumber, cherry tomatoes, add the black bean falafel balls, and drizzle with tahini dressing.
