Edamame Spinach Fritters with Mint and Chia
Ingredients
- 120g edamame beans
- 250g cooked spinach
- 10g mint leaves
- 8g fresh dill
- 250g ricotta cheese
- 2 eggs
- 50g chia seeds
- Salt and pepper, as needed
Preparation
Put the edamame beans in a bowl and lightly crush them with a fork. Squeeze the spinach in kitchen roll to remove as much water as possible. Add the spinach and all other ingredients to the bowl and stir well to combine. Leave to stand for 10-15 minutes for the chia seeds to soak in the moisture.
Heat a large non-stick frying pan on a low-medium heat and add a drizzle of olive oil. Form patties from the mixture and fry for 3 minutes on each side until browned. Serve with homemade tzatziki and a salad of choice.
Tips
These fritters are power packed with goodness and a great way to get some greens into the little ones. They can be eaten with a salad and homemade tzatziki or in a bread bun like a burger.
