Simple Tomato Toasts with Garlic Aioli
Ingredients
- 5 slices of sourdough cut in half
- Sliced Jarlsberg or sharp cheddar
- 1 large beefsteak tomato
- 1/2 cup Mayo
- 2 garlic cloves
- Salt & pepper
- Fresh basil
Preparation
Heat a large skillet with olive oil, add bread and cook 2-3 minutes per side until golden.
Grate garlic into the mayo and mix well.
Slice tomato and cheese.
Top each piece of bread with mayo, cheese and tomato.
Season well with salt and pepper.
Sprinkle with fresh basil and drizzle with olive oil.
Tips
Serve with fresh cucumbers and sliced peaches for a refreshing light lunch.
