Tofu Katsu Onigirazu Sandwiches
Ingredients
Rice
- 3 cups uncooked Japanese rice
- 1/2 cup rice wine vinegar
- 3 tbsp white sugar
- 1 1/2 tsp sea salt
Filling
- Nori sheets
- Breaded hot and spicy vegan tofu fillets
- Carrot ribbons
- Lettuce
- Sesame seeds
- Homemade teriyaki sauce
Preparation
Wash the Japanese rice 2-3 times with water.
Cook the rice in a rice cooker with an equal amount of water using a 1:1 ratio.
While the rice is cooking, pour rice wine vinegar, white sugar, and sea salt into a large wooden or ceramic bowl and mix well.
Once the rice is cooked, add it to the vinegar mixture and mix well to allow the hot rice to absorb the mixture.
Cover the rice with a damp towel, then refrigerate for at least 1 hour.
Wrap the sushi rice in nori sheets and fill with breaded tofu katsu, carrot ribbons, lettuce, then finish with sesame seeds and teriyaki sauce.
