Vegan Katsu Sushi Sandwiches
Ingredients
- 3 cups uncooked Japanese rice
- 1/2 cup rice wine vinegar
- 3 tablespoons white sugar
- 1 1/2 teaspoons sea salt
- Nori sheets
- Breaded hot and spicy vegan fillets from Quorn
- Carrot ribbons
- Lettuce
- Sesame seeds
- Homemade teriyaki sauce
Preparation
Wash the Japanese rice 2-3 times with water.
Cook in a rice cooker with equal parts water (1 cup rice to 1 cup water).
While the rice is cooking, pour rice vinegar, sugar and salt into a large wooden or ceramic bowl and mix well.
Once rice is cooked, add it into the vinegar mixture and mix well to absorb.
Cover the rice with a damp towel and refrigerate for at least 1 hour.
Assembly
Prepare the Katsu fillets according to package instructions if necessary
Lay a nori sheet flat, spread prepared sushi rice, add fillings like carrot ribbons, lettuce, and Katsu fillets, then fold or wrap to form a sandwich
Sprinkle with sesame seeds and drizzle with homemade teriyaki sauce
