Vegan BBQ Jackfruit Sandwich

Ingredients

  • 2 tbsp rapeseed or olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1/2 tsp ground cumin
  • 1 tbsp sriracha
  • 2 tbsp dark soy sauce
  • 1 tsp liquid smoke
  • 100ml tomato ketchup
  • 1 tbsp soft dark brown sugar
  • 1 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • 400g tin cherry tomatoes
  • pulled jackfruit

Preparation

  1. Heat the oil in a pan over medium heat, then fry the onion for a few minutes until it begins to turn translucent.

  2. Add the garlic and fry for a minute more.

  3. Add all the remaining sauce ingredients and stir to combine.

  4. Cover, reduce the heat to a simmer, and cook for 7-10 minutes or until all the tomatoes have burst and the sauce has reduced.

  5. Remove from the heat and allow to cool fully before blending in a food processor to a smooth, glossy sauce.

  6. Stir the sauce through grilled or fried pulled-jackfruit and serve in a toasted bun with your favorite slaw.
