Healthy Creamy Indian Pea Soup
Ingredients
- 2 cups frozen peas
- 1 cup spinach
- 1 medium onion
- 1 tsp cumin seeds
- 4-5 chopped garlic flakes
- 1/2 tsp black pepper
- 2 tsp fennel powder
- 1 tsp ginger powder
- Salt to taste
- 1 tbsp olive oil
- 1 tbsp coconut cream
- 2 cups water or vegetable stock
- 2 tsp lemon juice
Preparation
In a pan, add oil and cumin seeds; let them turn brown, then add onions and garlic and saute until onion is translucent.
Add fennel powder, ginger powder, salt, mix well for a few seconds, then add peas. Mix well and add water; cook on medium flame for 10-15 minutes, stirring occasionally.
Blanch spinach in another pan to maintain green color; add it later while blending. Note: Adding spinach with peas may make the soup brown.
Allow the pea mixture to cool completely, then blend with blanched spinach until smooth. Add warm water or more stock if a runnier consistency is desired.
Transfer the mixture to a deep nonstick pan, add more salt if needed, black pepper, lemon juice, and water if needed. Mix well and cook for 2-3 minutes.
Remove from heat, add coconut cream, and serve hot with a drizzle of olive oil and favorite toppings.
