2-Ingredient Sweet Potato Hash Browns

Ingredients

  • 2 large sweet potatoes, skin on (organic if possible)
  • 1-2 Tbsp avocado oil or other neutral oil
  • 1 pinch each salt and pepper (optional)

Optional serving items

  • Green onion or parsley
  • Hot sauce or ketchup
  • Tofu scramble

Preparation

  1. Spiralize the sweet potatoes into thin noodles or grate them using a box grater or food processor attachment.

  2. Heat a large skillet, preferably cast iron, over medium heat.

  3. Once hot, add a little oil and as many sweet potatoes as will fit without crowding.

  4. Season with a pinch of salt and pepper if desired.

  5. Cook covered for 5-8 minutes or until the exterior is browned and the interior is tender.

  6. Flip or toss the sweet potatoes at the halfway point for even cooking.

  7. Continue cooking in batches until all sweet potatoes are done.

Serving and storage tips

  1. Enjoy as is or serve with fresh herbs, hot sauce, ketchup, or a favorite scramble.

  2. Best when fresh, but leftovers can be stored in the refrigerator for up to 3 days.

  3. Reheat in a hot skillet for best results.
