Apple and Blueberry Crumble
Ingredients
- 1 kilo apples cut into pieces
- 2/3 cups spelt flour
- 2/3 cups rolled oats
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
- 60 grams vegan butter extra for the top
- 50 grams brown sugar I used Nativa
- 1 tablespoon lemon juice
- 2 teaspoons ground cinnamon
- 2 teaspoons ground spice
- 1/4 cup water
- 4 tablespoons flaked almonds extra for the top of crumble
- 4 tablespoons crushed peanuts
- 1 punnet blueberries
Preparation
In a pot add the cut apples, maple syrup, cinnamon, all spice, vanilla extract, water, lemon juice. Cook on low until apples appear caramelised. Set aside.
In a bowl add the flour, oats, sugar, blueberries, flaked almonds, crushed peanuts and butter. Combine with your fingers until you have a crumbly mixture.
Place the apple mixture in a pie dish then add the dry mixture on top. Add a few knobs of butter then sprinkle some flaked almonds on top. Cook at 180 for 30 minutes or until golden brown
