Apple and Blueberry Crumble

Ingredients

  • 1 kilo apples cut into pieces
  • 2/3 cups spelt flour
  • 2/3 cups rolled oats
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 60 grams vegan butter extra for the top
  • 50 grams brown sugar I used Nativa
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground spice
  • 1/4 cup water
  • 4 tablespoons flaked almonds extra for the top of crumble
  • 4 tablespoons crushed peanuts
  • 1 punnet blueberries

Preparation

  1. In a pot add the cut apples, maple syrup, cinnamon, all spice, vanilla extract, water, lemon juice. Cook on low until apples appear caramelised. Set aside.

  2. In a bowl add the flour, oats, sugar, blueberries, flaked almonds, crushed peanuts and butter. Combine with your fingers until you have a crumbly mixture.

  3. Place the apple mixture in a pie dish then add the dry mixture on top. Add a few knobs of butter then sprinkle some flaked almonds on top. Cook at 180 for 30 minutes or until golden brown
