Sweet and Earthy Matcha Apple Pie

Ingredients

Filling

  • 8 small apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp salt
  • 1 tbsp cornstarch
  • 1 tablespoon lemon juice

Pie crust - plain

  • 335g all-purpose flour
  • 30g sugar
  • 165g butter
  • 6-7 tbsp iced water
  • Pinch of salt

Pie crust - matcha

  • 165g all-purpose flour
  • 15g sugar
  • 85g butter
  • 3-4 tbsp iced water
  • 8g matcha powder
  • Pinch of salt

Preparation

Filling

  1. Combine all filling ingredients and set aside

Crust

  1. Place flour, sugar, and salt into a food processor and pulse a few times to combine

  2. Add cold diced butter and pulse the mixture until coarse crumbs form with some pea-sized pieces then stop mixing

  3. Add water and pulse just until moist clumps or small balls form

  4. Transfer dough to a clean work surface, and gather dough together into a ball without kneading

  5. Divide dough into 2, cover with plastic wrap, and refrigerate for 30 minutes

Assembly and baking

  1. Preheat oven to 200°C

  2. Roll out the chilled pie dough and fill with apple filling

  3. Roll out the remaining dough, cut into strips, and create a lattice top

  4. Lightly brush the pie with milk and sprinkle with coarse sugar

  5. Bake pie at 200°C for 15 minutes, then reduce temperature to 180°C and bake for an additional 35-45 minutes or until golden brown
