Sweet and Earthy Matcha Apple Pie
Ingredients
Filling
- 8 small apples, peeled and sliced
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp salt
- 1 tbsp cornstarch
- 1 tablespoon lemon juice
Pie crust - plain
- 335g all-purpose flour
- 30g sugar
- 165g butter
- 6-7 tbsp iced water
- Pinch of salt
Pie crust - matcha
- 165g all-purpose flour
- 15g sugar
- 85g butter
- 3-4 tbsp iced water
- 8g matcha powder
- Pinch of salt
Preparation
Filling
Combine all filling ingredients and set aside
Crust
Place flour, sugar, and salt into a food processor and pulse a few times to combine
Add cold diced butter and pulse the mixture until coarse crumbs form with some pea-sized pieces then stop mixing
Add water and pulse just until moist clumps or small balls form
Transfer dough to a clean work surface, and gather dough together into a ball without kneading
Divide dough into 2, cover with plastic wrap, and refrigerate for 30 minutes
Assembly and baking
Preheat oven to 200°C
Roll out the chilled pie dough and fill with apple filling
Roll out the remaining dough, cut into strips, and create a lattice top
Lightly brush the pie with milk and sprinkle with coarse sugar
Bake pie at 200°C for 15 minutes, then reduce temperature to 180°C and bake for an additional 35-45 minutes or until golden brown
