Blueberry Balsamic Pie Filling

Ingredients

  • 6 cups blueberries
  • 1/2 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon Chinese five spice
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Earth Balance butter
  • 1/4 cup cornstarch
  • 1/4 cup water

Preparation

  1. Combine the blueberries, sugar, cinnamon, Chinese five spice, ground black pepper, balsamic vinegar, and Earth Balance butter in a pot.

  2. Bring the mixture to a simmer over medium heat, stirring and pressing the berries against the side of the pot to break them down slightly.

  3. In a small bowl, mix 1/4 cup cornstarch with 1/4 cup water until well combined.

  4. Pour the cornstarch mixture into the pot with the hot blueberry mixture.

  5. Stir continuously and heat until the filling thickens.

Tips

  1. The filling will be very thick, making it ideal for pie, pancake toppings, or biscuits.

  2. For a Halloween twist, brush the pie crust with a mixture of molasses, water, and baking soda before adding the filling, though the crust recipe is not provided here.
