Baked Apple Oatmeal Delight

Ingredients

  • 4 apples, sliced thinly
  • 5-6 tbsp maple syrup, divided
  • 3 tsp cinnamon or apple pie spice, divided
  • Juice of 1 lemon
  • 1 tsp cornstarch
  • 2 cups gluten-free rolled oats
  • 1/2 cup chopped pecans (or sunflower seeds for nut-free option)
  • 2 tsp baking powder
  • 1 1/2 tbsp ground flaxseed
  • 1 1/2 cups unsweetened soy milk (or other unsweetened milk of choice)
  • 2 tbsp nut or seed butter
  • 1/4-1/2 tsp salt

Preparation

  1. Set the oven to 350°F (175°C).

  2. In a large skillet over medium-low heat, combine the sliced apples, 2 tablespoons of maple syrup, lemon juice, 1 teaspoon of cinnamon, cornstarch, and a pinch of salt. Sauté until the apple slices have softened, then remove from heat and set aside.

  3. In a mixing bowl, combine the oats and the remaining ingredients, including 1-2 teaspoons of cinnamon or apple pie spice. Stir well to ensure all ingredients are evenly mixed. Set aside.

  4. Grease a 9x13-inch baking dish.

  5. Pour the sautéed apples into the baking dish, spreading them evenly.

  6. Top the apples with the oatmeal mixture, ensuring an even layer.

  7. Place the baking dish in the preheated oven and bake for 20-25 minutes, until the top is golden and the oats are baked.

  8. Once baked, remove the dish from the oven and allow it to cool for about 10 minutes before serving.

  9. Serve the baked apple oatmeal as desired, optionally topped with a few tablespoons of plant-based yogurt.
