Balsamic Garlic Grilled Mushroom Skewers

Ingredients

  • 2 pounds mushrooms, sliced 1/4 inch thick
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce (or tamari)
  • 3 cloves garlic, chopped
  • 1/2 teaspoon thyme, chopped
  • salt and pepper to taste

Preparation

  1. Combine the balsamic vinegar, soy sauce, garlic, thyme, salt, and pepper to make the marinade

  2. Marinate the mushrooms in the mixture for 30 minutes.

  3. Skewer the mushrooms and grill over medium-high heat until just tender and slightly charred, about 2-3 minutes per side.

Saute alternative

  1. Saute the mushrooms in a pan with the mixture until the liquid dissipates and the sauce glazes them, using a little olive oil spray to prevent sticking
