Berry Mousse Topped with Berries and Quinoa Puffs

Ingredients

  • 1 cup of frozen berries
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 50ml (roughly) aquafaba
  • 2 tbsp icing sugar
  • 1/4 tsp cream of tartar
  • 1/4 tsp xantham gum
  • 1 tsp beetroot powder

Preparation

  1. Blend the frozen berries in a high speed blender

  2. When the consistency is like a smoothie or juice you can then add the vanilla extract, maple syrup, and lemon juice

  3. Blend again for another minute until well combined

  4. In a bowl, whisk the aquafaba using a high speed electric whisk

  5. When the liquid turns white add the icing sugar, cream of tartar, xantham gum, and beetroot powder

  6. Continue whisking for another 3 minutes

  7. The mixture should then be able to hold its shape

  8. You can then add the berry mixture into the bowl with the aquafaba

  9. Do so slowly and carefully fold the mixture together
