Vegan Marshmallow Cream

Ingredients

  • 50ml aquafaba
  • 1/2 tsp cream of tartar
  • 1/2 tsp vanilla extract
  • 1/4 cup sugar
  • 1/4 tsp xanthan gum

Preparation

  1. Place the aquafaba, vanilla extract and cream of tartar into a bowl and whisk until foamy

  2. Slowly add in the sugar and xanthan gum whilst whisking

  3. Whisk for around 10 minutes until thick and fluffy

  4. Transfer into a jar and store refrigerated for up to a week
