Black Bean Soup with Roasted Corn, Cilantro Rice, Avocado, and Sour Cream

Ingredients

  • 2 cans of Black Beans
  • 4 Celery Stalks
  • 1 medium Tomato
  • 5 cloves of Garlic
  • 1 Small Onion
  • Fresh Cilantro
  • 1/2 cup Roasted Corn
  • 2 tsp of Cumin
  • 2 tsp of @bragglivefoodproducts Aminos
  • 1 tsp of Hickory Salt (sub liquid smoke)
  • 2 Bay Leaves
  • 5 cups of water
  • Salt & Pepper to taste
  • Cooked @lundbergfarms Jasmine Rice

Preparation

  1. Sauté the onion, garlic, and celery until the onion is translucent.

  2. Add the black beans, roasted corn, chopped tomato, and seasonings, and let simmer for 10 minutes.

  3. Add the bay leaves and cover with water.

  4. Lower the heat to medium-low and let simmer for 20 to 25 minutes.

  5. Serve with a scoop of cilantro rice, fresh cilantro, avocado, and sour cream.
