Bubble Gum Chocolate Cheesecake

Ingredients

Base

  • 1 cup oat flour
  • 1 cup grated almonds
  • 1/4 cup maple syrup
  • 3 tbsp cocoa
  • pinch of Himalayan salt
  • 2 spoons of coconut oil
  • a little water

Filling

  • 1/2 cup of red currants
  • 1/2 cup mixed berries
  • 1 cup of thick yoghurt of your choice
  • 1 spoon of cashew butter (optional)
  • 1 tbsp of tapioca flour
  • 1 tbsp of agar agar

Preparation

  1. Mix all base ingredients together and refrigerate for at least 30 minutes.

  2. Blend the fruits for the filling.

  3. Mix all filling ingredients and boil for 1 minute.

  4. Allow the mixture to cool to room temperature.

  5. Pour the filling over the base.

  6. Refrigerate for a few hours until set.
