Chilled Sesame Garlic Noodles
Ingredients
Noodles
- 2 servings noodles (ramen or soba)
- 1/2 cup shelled edamame
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 2 servings firm tofu
Sauce
- 1/4 cup broth (vegetable or vegan beef)
- 1/4 cup soy sauce
- 3 tsp sesame oil
- 1/2 tsp rice vinegar
- 1/4 tsp ground ginger
- 3 cloves minced garlic
- 1 tbsp brown sugar
- 1 tsp sesame seeds
- Dash of cayenne pepper
- Optional: 1/4 tsp Chinese 5 spice powder
Preparation
Prepare noodles according to package instructions and whisk all sauce ingredients together in a small bowl.
Pour sauce over noodles and let sit in the fridge for an hour or up to 8 hours.
Prep vegetables and tofu when you’re ready to eat.
Toss vegetables and tofu with noodles and sauce.
Alternatively, prep vegetables and tofu at the same time as noodles and sauce, toss everything together, and refrigerate until you’re ready to eat.

This recipe is perfect for busy days and meal prep as it can be made in advance and served chilled.
