Creamy Cucumber Salad Sandwich with Hummus
Ingredients
Cucumber salad
- 1/3 cup cucumber, thinly sliced
- 1/4 cup carrots, finely diced
- 1 date, finely chopped
- 1 tablespoon sliced almonds
Dressing
- 3 tablespoons almond milk yogurt or plant-based yogurt
- 1 teaspoon mayonnaise (optional)
- 1 tablespoon lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1 tablespoon fresh dill, finely chopped
Sandwich assembly
- slices of bread, toasted
- hummus, for spreading
- mixed greens
- 1 tomato, sliced
Preparation
Combine cucumber, carrots, date, and sliced almonds in a bowl
In a separate bowl, whisk together yogurt, mayonnaise (if using), lemon juice, salt, pepper, garlic powder, oregano, and dill
Pour the dressing over the salad mixture and stir to combine
Toast the bread slices until golden
Spread hummus evenly on the toasted bread
