Creamy Cucumber Salad Sandwich
Ingredients
Creamy cucumber salad
- 1/3 cup thinly sliced cucumber
- 1/4 cup finely diced carrots
- 1 finely chopped date
- 1 tablespoon sliced almonds
Dressing
- 3 tablespoons almond milk yogurt or plain plant-based yogurt
- 1 teaspoon vegan mayonnaise (optional)
- 1 tablespoon lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon oregano
- 1 tablespoon finely chopped fresh dill
Sandwich components
- Toasted bread
- Hummus
- Fresh greens
- Sliced tomato
Preparation
Mix all the dressing ingredients together in a small bowl.
Combine the cucumber, carrots, date, and almonds with the dressing to make the creamy cucumber salad.
Toast the bread until golden brown.
Spread a layer of hummus on the toasted bread.
Add fresh greens and sliced tomato on top of the hummus.
Pile the creamy cucumber salad over the vegetables.
