Creamy Cucumber Salad Sandwich
Ingredients
- 1/3 cup thinly sliced cucumber
- 1/4 cup finely diced carrots
- 1 date, finely chopped
- 1 tablespoon sliced almonds
- 3 tablespoons almond milk yogurt or plain plant-based yogurt
- 1 teaspoon vegan mayo (optional)
- 1 tablespoon lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1 tablespoon fresh dill, finely chopped
- Dave's Killer Bread
- Hummus
- Mixed greens
- Tomato
Preparation
In a small bowl, mix together the almond milk yogurt, vegan mayo if using, lemon juice, salt, pepper, garlic powder, oregano, and fresh dill to make the dressing.
In another bowl, combine the sliced cucumber, diced carrots, chopped date, and sliced almonds, then add the dressing and mix well to create the creamy cucumber salad.
Toast the Dave's Killer Bread slices.
Spread a layer of hummus on each toasted bread slice.
Top with mixed greens, sliced tomato, and a generous amount of the creamy cucumber salad.
Serve immediately.
