Date Oat and Walnut Muffins

Ingredients

  • 3 cups rolled oats
  • 2 cups spelt flour
  • 1 tsp baking powder
  • 2 tsp salt
  • 1/4 cup flax seeds
  • 3/4 cups walnut pieces
  • 1/3 cup coconut oil
  • 1/3 cup unsalted butter
  • 3/4 cup date syrup
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/2 cup chopped medjool dates

Preparation

  1. Preheat the oven to 160C and prepare a 12-cup muffin tin.

  2. Combine the oats, flour, baking powder, salt and flax in a large bowl.

  3. In a saucepan, melt together the oil, butter, syrup and coconut sugar and set aside to cool.

  4. Once cool, add to the flour mixture with the eggs and stir until just combined.

  5. Fold in the dates and walnuts.

  6. Spoon into the muffin cups about 3/4 full and bake for 25 to 30 minutes until golden.

Notes

  1. Dates are considered the fruits of Eden and are staples in Middle Eastern households, often served with tea.

  2. Dates provide a natural alternative to refined sugar due to high fiber content, which slows sugar absorption and reduces blood sugar spikes, but overconsumption should be avoided.

  3. Promoting a balanced relationship with food involves moderation rather than categorizing foods as 'good' or 'bad'.
