Easy and Healthy Cherry Tart

Ingredients

Tart dough

  • 275 g oat flour
  • 75 g almond flour
  • 60 g tapioca flour
  • 150 g plant-based butter
  • 80 g apple sauce
  • 50 ml maple syrup
  • 150 ml cold water
  • 1 tsp cinnamon
  • Plant-based milk (for brushing)

Filling

  • 500 g cherries
  • 1 tbsp cornstarch
  • 2 tsp cinnamon
  • Pinch of salt
  • Optional: 3 tbsp maple syrup

Preparation

  1. Put all ingredients for the tart dough in a bowl and knead it with your hands or use a food processor until a firm dough forms, then shape into a ball, wrap in plastic wrap, and refrigerate.

  2. Pit the cherries and place them in a bowl, optionally briefly heat them in a saucepan with a splash of water to soften slightly, and meanwhile preheat the oven to 180 degrees Celsius with top and bottom heat.

  3. Add the cornstarch and cinnamon to the cherries, mix well, and let stand.

  4. Roll out the dough, use two-thirds for the bottom and edges of a tart pan, add the cherry filling, and make strips from the remaining dough to arrange over the filling.

  5. Brush the dough strips with plant-based milk and bake the tart in the oven for 45 minutes until done.

  6. Allow the tart to cool, sprinkle with powdered sugar, and cut into slices.
