Easy Sugar-Free Apple Cake with Dates
Ingredients
Date paste
- 200 g dried dates (pitted)
- 200 ml hot water
Cake
- 350 g apples (e.g., Boskop)
- 150 g soft butter
- 3 eggs (medium)
- 225 g all-purpose flour (Type 405)
- 2 1/2 tsp baking powder
- 1 tsp cinnamon
- 30 g sliced almonds
- Butter, for greasing pan
- Flour, for dusting pan
Preparation
Soak dates in a small bowl with boiling water for 2-3 hours, then drain and puree to a fine paste
Preheat oven to 180°C conventional or 160°C convection. Grease a 26cm springform pan with butter and dust with flour. Wash, dry, peel, halve, quarter, and slice the apples
Cream the soft butter, then add eggs and date paste and mix until creamy. In a separate bowl, mix and sift the dry ingredients, then add to the butter mixture and mix to a smooth batter. Fold in half of the apple slices
Spread the batter into the prepared pan and arrange the remaining apple slices on top. Sprinkle with almond slices. Bake in the preheated oven for about 40 minutes
Let the cake cool slightly on a wire rack. Release the springform rim with a knife and let cool completely. The cake yields about 12 slices
Tips
You can also use soft dates which do not require soaking and can be pureed directly. Instead of date paste, substitute the same amount of applesauce or banana puree for natural sweetness. Store cooled cake in the refrigerator in an airtight container for at least 3 days
