Healthy Biscoff Thumbprint Cookies

Ingredients

  • 50g oat flour (blended oats)
  • 25g almond flour/ground almonds
  • 40g natural sweetener granules @natvialiving - can sub for sugar
  • 1/2 tsp bicarbonate of soda/baking soda
  • Pinch of fine sea salt
  • 2 tbsp (30ml) unsweetened almond milk
  • 1 tbsp (12ml) melted coconut oil @vitacocoeu
  • Vanilla flavdrops @myprotein - sub for 1/8 tsp vanilla extract (optional)

Filling

  • 27g Biscoff spread @lotusbiscoffuk

Preparation

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

  2. In a bowl, mix together the oat flour, almond flour, sweetener, bicarbonate of soda, and salt.

  3. Add the almond milk, melted coconut oil, and vanilla flavdrops or extract to the dry ingredients and stir until a dough forms.

  4. Roll the dough into small balls and place them on the prepared baking sheet.

  5. Press a thumbprint into the center of each dough ball.

  6. Fill each thumbprint with Biscoff spread.

  7. Bake for 10 to 15 minutes or until the cookies are golden brown.

  8. Remove from the oven and allow the cookies to cool on the baking sheet before serving.
