Single-Serving Oatmeal Raisin Chocolate Chip Cookie

Ingredients

  • 1 tbsp peanut butter (or other nut butter)
  • 1 tsp melted coconut oil
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • Pinch of flaky sea salt
  • 1/8 tsp baking powder
  • 2 tbsp rolled oats
  • 2 tbsp whole wheat flour (or sub GF all-purpose)
  • 2 tbsp chopped chocolate or chocolate chips
  • 2 tbsp raisins

Preparation

  1. Preheat the oven to 350F. Line a baking sheet with parchment paper.

  2. Melt peanut butter, coconut oil, and maple syrup in the microwave for 20 sec.

  3. Whisk in vanilla.

  4. Add to a bowl along with baking powder, oats, and flour. Stir to combine until a soft dough forms.

  5. Fold in chocolate chips.

  6. Form into one cookie on the baking sheet.

  7. Bake for 10 min.

  8. Allow cooling for 3 min before enjoying!
