Single-Serving Oatmeal Raisin Chocolate Chip Cookie
Ingredients
- 1 tbsp peanut butter (or other nut butter)
- 1 tsp melted coconut oil
- 2 tbsp maple syrup
- 1/4 tsp vanilla extract
- Pinch of flaky sea salt
- 1/8 tsp baking powder
- 2 tbsp rolled oats
- 2 tbsp whole wheat flour (or sub GF all-purpose)
- 2 tbsp chopped chocolate or chocolate chips
- 2 tbsp raisins
Preparation
Preheat the oven to 350F. Line a baking sheet with parchment paper.
Melt peanut butter, coconut oil, and maple syrup in the microwave for 20 sec.
Whisk in vanilla.
Add to a bowl along with baking powder, oats, and flour. Stir to combine until a soft dough forms.
Fold in chocolate chips.
Form into one cookie on the baking sheet.
Bake for 10 min.
Allow cooling for 3 min before enjoying!
