Immune-Boosting Tortellini Soup

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 small chopped white onion
  • 3-4 roughly chopped garlic cloves
  • 1 long chopped celery stick
  • 1 chopped medium carrot
  • 3 stock cubes
  • 1 cup frozen peas
  • 2 cups chopped kale
  • 1.5 L boiled water
  • 1 pack tortellini
  • 1/2 cup tomato purée
  • 1 tbsp tomato passata
  • 1/2 cup heavy cream
  • 1/3 cup Parmesan

Preparation

  1. Sauté the onions and garlic for a minute in the olive oil

  2. Add the carrots and celery and stir in for a few seconds

  3. Boil the water in a kettle and dissolve 3 stock cubes

  4. Add the tomato and stock water

  5. Add the tortellini and bring to a boil; halfway through cooking, add the peas

  6. Add the chopped kale, Parmesan, and cream with the heat off and mix in

  7. Serve hot

Tips

  1. This soup is gut-healthy and can be prepared in about 15 minutes
