Immune-Boosting Tortellini Soup
Ingredients
- 2 tbsp extra virgin olive oil
- 1 small chopped white onion
- 3-4 roughly chopped garlic cloves
- 1 long chopped celery stick
- 1 chopped medium carrot
- 3 stock cubes
- 1 cup frozen peas
- 2 cups chopped kale
- 1.5 L boiled water
- 1 pack tortellini
- 1/2 cup tomato purée
- 1 tbsp tomato passata
- 1/2 cup heavy cream
- 1/3 cup Parmesan
Preparation
Sauté the onions and garlic for a minute in the olive oil
Add the carrots and celery and stir in for a few seconds
Boil the water in a kettle and dissolve 3 stock cubes
Add the tomato and stock water
Add the tortellini and bring to a boil; halfway through cooking, add the peas
Add the chopped kale, Parmesan, and cream with the heat off and mix in
Serve hot

This soup is gut-healthy and can be prepared in about 15 minutes
