Lemon Baked Oats Mugcake
Ingredients
- 40g or 5 tbsp porridge oats (blended or not blended)
- 2 tbsp any plain yogurt or milk
- 1 tbsp extra yogurt (for serving)
- 1 egg OR 1 tbsp yogurt + 1 tsp baking powder + squeeze of lemon juice
- 1 tsp sweetener/sugar or syrup
- 1 tsp lemon extract
Preparation
Put all the ingredients into a cup and mix until foamy, ensuring that all the oats are combined from the bottom of the mug. If you have a blender, you can blitz the oats for a few seconds to achieve a more cake-like texture. Clean the rim of the mug with your finger.
Microwave on high for 90 seconds or transfer the mixture into a lined oven-proof dish and bake in the oven for 15 minutes at 180C/350F/gas mark 4.
Give the mug a shake and then tip the mugcake out onto a plate. Top with extra yogurt.
