Middle Eastern Baba Ganoush
Ingredients
- 3 eggplants
- 2 garlic cloves
- 2 tbsp tahini
- 2 tbsp EVOO
- 2 tbsp lemon juice
- 1/4 tsp paprika
- 1/4 tsp cumin
- 1/2 tsp salt
- 1/8 tsp black pepper
- Fresh herbs for garnish
Preparation
Roast eggplants and garlic until fork-tender, peel
Combine everything together in a bowl
Mix by using hand blender (food processor should work too)
Top with fresh parsley, mint or thyme, red pepper flakes and more EVOO
