Middle Eastern Baba Ganoush

Ingredients

  • 3 eggplants
  • 2 garlic cloves
  • 2 tbsp tahini
  • 2 tbsp EVOO
  • 2 tbsp lemon juice
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • Fresh herbs for garnish

Preparation

  1. Roast eggplants and garlic until fork-tender, peel

  2. Combine everything together in a bowl

  3. Mix by using hand blender (food processor should work too)

  4. Top with fresh parsley, mint or thyme, red pepper flakes and more EVOO
