Millet and Black Bean Veggie Burgers
Ingredients
- 3 small sweet potatoes
- 1/3 cup dry millet
- 1 can black beans (drained and rinsed) or 3/4 cup dry black beans, cooked
- 1/2 red onion
- 1/2 cup cilantro leaves
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon sriracha (or to taste)
- salt to taste
- 1 cup old fashioned rolled oats
Preparation
Roast 3 small sweet potatoes at 400°F until soft, then peel and cut into small pieces when cool.
Cook 1/3 cup dry millet according to package directions.
Combine the sweet potatoes and millet with the black beans.
Add 1/2 red onion (finely chopped), 1/2 cup cilantro leaves (chopped), 2 teaspoons cumin, 1 teaspoon chili powder, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 tablespoon sriracha (or to taste), and salt to taste.
Mash with a potato masher until well combined, but try not to mash too many of the beans.
Process 1 cup old fashioned rolled oats until flakes just break apart but not into flour.
Mix the oats into the burger batter.
Refrigerate the batter for at least 15 minutes to help it bind better.
Use a 1/4 cup measuring cup to form equal-sized patties.
Cook the patties by pan frying or baking on a parchment-lined baking sheet at 400°F for 15-20 minutes, flipping halfway, until golden brown.
