Mixed Vegetable Salad with Peanut Butter Dressing
Ingredients
- 2 colors of cabbage
- Colored bell pepper
- Carrots
- Cucumber
- Coriander leaves
- Roasted peanuts
- Fried noodles
- Optional: green onions
Dressing
- 2 tablespoons peanut butter
- 1 tablespoon jaggery powder
- 1 teaspoon red chili powder
- Coriander stems
- 2 cloves garlic
- 1 small piece of ginger
- 1 tablespoon light soy sauce
- Juice of 1 lemon
- Salt to taste (if required)
Preparation
Chop the cabbage, bell pepper, carrots, cucumber, coriander leaves, and optional green onions.
Add roasted peanuts and fried noodles to the chopped vegetables and mix well.
In a blender, combine peanut butter, jaggery powder, red chili powder, coriander stems, garlic, ginger, soy sauce, lemon juice, and salt if needed.
Blend the mixture until smooth to prepare the dressing.
Drizzle the dressing over the salad just before serving.
Tips
Never mix the dressing in advance; always drizzle it just before serving to maintain crunch and freshness.
