Oven Baked Potatoes with Mustard Sauce
Ingredients
- 3 medium baked potatoes
- 100g zucchini
- 100g mushrooms
- 100g cheese (vegan)
- 3 tablespoons plant butter
- salt and pepper
Sauce
- Honey and mustard sauce
Preparation
Preheat the oven to 200°C (390°F) with hot air.
Cut the potatoes in half and make a cut in the center. Drizzle with olive oil, salt, and pepper. Place on a baking tray and bake in the oven for 45 minutes.
Wash and shred the zucchini. Wash and chop the mushrooms into small slices.
Remove the potatoes from the oven. Distribute the butter on top, add the zucchini, mushrooms, and cheese. Season with salt and pepper. Return the tray to the oven and bake for another 10 minutes or until golden and crispy.
Serve the baked potatoes hot with honey and mustard sauce or your favorite sauce.
