Simple Ratatouille Inspired Vegetable Sauté
Ingredients
- 500 grams red bell peppers
- 1 large red onion
- 250 grams potatoes, cut small
- 3 tablespoons olive oil
- Salt and pepper to taste
Preparation
Cut the potatoes into small pieces.
In a frypan, add all ingredients and sauté on medium heat uncovered.
Stir occasionally.
Cook for 15 minutes or until potatoes are cooked.
