Simple Ratatouille Inspired Vegetable Sauté

Ingredients

  • 500 grams red bell peppers
  • 1 large red onion
  • 250 grams potatoes, cut small
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  1. Cut the potatoes into small pieces.

  2. In a frypan, add all ingredients and sauté on medium heat uncovered.

  3. Stir occasionally.

  4. Cook for 15 minutes or until potatoes are cooked.
