Strawberry Spinach Salad with Balsamic Dressing

Ingredients

  • 300 g baby spinach
  • 450 g fresh strawberries
  • 140 g feta cheese
  • 1/3 small red onion

Candied pecans

  • 3/4 cup chopped pecans
  • 1 1/2 tbsp brown sugar
  • 1/2 tbsp butter

Dressing

  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • salt and black pepper

Preparation

  1. Prepare the caramelized pecans by adding butter and brown sugar to a pan on medium heat, stirring until the sugar melts and caramelizes for 2-3 minutes, then set aside to cool.

  2. For the dressing, heat a saucepan on medium heat, add balsamic vinegar and bring to a boil until it reduces to half, about 3 minutes. In a jar, combine the reduced vinegar with olive oil, Dijon mustard, honey, salt, and black pepper, and whisk well.

  3. Assemble the salad by placing the salad ingredients in a bowl, adding the caramelized pecans, drizzling with the dressing, and serving immediately.
