Strawberry Spinach Salad with Balsamic Dressing
Ingredients
- 300 g baby spinach
- 450 g fresh strawberries
- 140 g feta cheese
- 1/3 small red onion
Candied pecans
- 3/4 cup chopped pecans
- 1 1/2 tbsp brown sugar
- 1/2 tbsp butter
Dressing
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- 1 tbsp Dijon mustard
- 1 tbsp honey
- salt and black pepper
Preparation
Prepare the caramelized pecans by adding butter and brown sugar to a pan on medium heat, stirring until the sugar melts and caramelizes for 2-3 minutes, then set aside to cool.
For the dressing, heat a saucepan on medium heat, add balsamic vinegar and bring to a boil until it reduces to half, about 3 minutes. In a jar, combine the reduced vinegar with olive oil, Dijon mustard, honey, salt, and black pepper, and whisk well.
Assemble the salad by placing the salad ingredients in a bowl, adding the caramelized pecans, drizzling with the dressing, and serving immediately.
