Summer Salad with Strawberry Balsamic Vinaigrette
Ingredients
Strawberry balsamic vinaigrette
- 1 tbsp maple syrup
- 4 tablespoons olive oil
- 2 tbsp balsamic vinegar
- 1 tsp apple cider vinegar
- 1/2 cup chopped strawberries
- Salt and pepper
Salad
- Spinach
- Strawberries
- Blueberries
- Pistachios
- Avocado
- Feta
Preparation
Add all vinaigrette ingredients to a blender or food processor and mix until smooth.
Assemble the salad by combining spinach, strawberries, blueberries, pistachios, avocado, and feta in a bowl.
Drizzle the vinaigrette over the salad and toss to combine.
