Summer Pineapple Banana Ice Cream

Ingredients

  • Chunks of 1 pineapple (about 2-3 cups)
  • 1 banana
  • 1/4 cup unsweetened shredded coconut (plus more for topping)
  • 1/4 + 1/8 cup vanilla protein shake or coconut water

Preparation

  1. Cut pineapple and banana into chunks and freeze for at least 2 hours, or until hard. You can use already frozen fruit.

  2. Add them to a blender with the coconut and 1/4 cup liquid.

  3. Blend, scraping down the sides occasionally, adding more liquid if it is too thick. You should end up with a super creamy treat.

  4. Serve and enjoy.
