Sweet and Spicy Bbq Jackfruit Kale and Mango Melts

Ingredients

  • 3 wraps or flatbreads
  • 1 can jackfruit in brine
  • 1 small onion or 1/2 medium onion
  • 2 garlic cloves
  • 1 jalapeño
  • 1/3 cup vegan BBQ sauce
  • 1 large handful chopped kale (purple kale used)
  • 1/2 cup chopped mango
  • 1/2 cup vegan cheese
  • Fresh lime juice

Preparation

  1. Drain jackfruit and break pieces apart using hands, removing any tough seeds.

  2. Thinly slice onion and jalapeño and chop garlic.

  3. Heat a few drops of avocado oil in a non-stick pan on low heat and fry onions until fragrant and starting to brown.

  4. Add garlic and pulled jackfruit and cook on low medium heat for about 15 minutes until all excess liquid is gone.

  5. Add sliced jalapeños and BBQ sauce and continue cooking for another 5 minutes.

  6. Meanwhile, wash and chop kale, squeeze lime juice over it, and massage it optionally.

  7. Assemble flatbread or wrap with vegan cheese, jackfruit mix, kale, and mango, adding a bit more BBQ sauce if desired.

  8. Fold the wrap and fry in a non-stick pan on low medium heat until lightly browned and cheese is melted.

  9. Cut in half and enjoy.
