Tangy Raw Tofu Bowl
Ingredients
- 2 C kale, finely chopped
- 1 tsp olive oil
- 1 lemon, juiced
- 1 tbsp rice vinegar
- Salt and pepper
- 1/4 avocado, sliced
- 1/2 English cucumber, sliced
- 2 oz extra firm pumpkin tofu
- 1 tbsp hemp seeds
- 1 tsp pumpkin seeds
Preparation
Place kale in a bowl and drizzle with olive oil, lemon juice, vinegar and salt and pepper. Use your hands to massage the leaves for 15-30 seconds until tender. Transfer to a serving bowl.
Add avocado and cucumber to bowl.
Cube tofu and place on top of the bowls.
Sprinkle with hemp seeds and pumpkin seeds. Toss to combine and add a little extra vinegar if desired.
Notes
This recipe serves one and can be prepared in 10 minutes. It is full of healthy fats and plant protein.
