Tangy Raw Tofu Bowl

Ingredients

  • 2 C kale, finely chopped
  • 1 tsp olive oil
  • 1 lemon, juiced
  • 1 tbsp rice vinegar
  • Salt and pepper
  • 1/4 avocado, sliced
  • 1/2 English cucumber, sliced
  • 2 oz extra firm pumpkin tofu
  • 1 tbsp hemp seeds
  • 1 tsp pumpkin seeds

Preparation

  1. Place kale in a bowl and drizzle with olive oil, lemon juice, vinegar and salt and pepper. Use your hands to massage the leaves for 15-30 seconds until tender. Transfer to a serving bowl.

  2. Add avocado and cucumber to bowl.

  3. Cube tofu and place on top of the bowls.

  4. Sprinkle with hemp seeds and pumpkin seeds. Toss to combine and add a little extra vinegar if desired.

Notes

  1. This recipe serves one and can be prepared in 10 minutes. It is full of healthy fats and plant protein.
