Tempeh Lettuce and Tomato Sandwich
Ingredients
- 2 slices sprouted bread
- 6-8 tempeh strips (prepared)
- 3-4 slices tomato
- Handful of spring mix greens
- 1/2 avocado, sliced
- Optional: everything but the bagel seasoning
- Optional: hot sauce
Smoky tempeh strips
- 3 tbsp soy sauce
- 2 tbsp rice wine vinegar or apple cider vinegar
- 2 tbsp ketchup
- 1/2 tsp coriander
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- 1 block tempeh
Preparation
In a shallow dish, combine soy sauce, ketchup, vinegar, and seasonings and whisk together to combine.
Place tempeh strips into the marinade and allow to sit for at least 10 minutes.
Grease a pan or use a non-stick pan and bring to medium heat.
Place tempeh strips on the heated surface and cook for about 3-4 minutes or until tempeh begins to brown on the first side.
Add additional marinade on top of tempeh and flip to cook on the other side for another 3-4 minutes or until browned and slightly crisp.
Continue cooking until tempeh is browned evenly.
Remove tempeh from the stove top and assemble the sandwich with bread layered with greens, tempeh, and topped with tomato slices and avocado.
