Toasted Sourdough Sandwich with Smoky Tempeh and Spicy Chipotle White Bean Hummus

Ingredients

Smoky tempeh

  • Tempeh: 1 block of @tibatempeh
  • Tomato paste: 1 1/2 T
  • Soya sauce: 2 T
  • Sriracha: 1 T
  • Coconut sugar: 1 T
  • Olive oil: 2 T

Spicy chipotle white bean hummus

  • Cauliflower: 1 small head chopped in chunks
  • Garlic: 1 clove
  • White beans: 1 tin
  • Chipotle paste: up to 3 T
  • Apple cider vinegar: 1 T
  • Olive oil: 1/4th C + 1 T
  • Oat milk: 1/4th C
  • Smoked salt: to taste

Preparation

Smoky tempeh

  1. Cut tempeh in pieces

  2. Mix all the ingredients listed under marinade and add tempeh

  3. Marinate for 30 minutes

  4. Roast at 180C for 30 minutes or pan fry

Spicy chipotle white bean hummus

  1. Roast cauliflower and garlic with 1 T oil and salt till done

  2. Add to food processor with the remaining ingredients, start with 2 T chipotle, 1/2 T of vinegar and 2 t salt. Blend to form hummus. Taste and adjust sour, spicy, salty flavours as desired

Sandwich assembly

  1. Toast the sourdough bread until golden brown

  2. Spread the spicy chipotle white bean hummus on one slice of bread

  3. Add the smoky tempeh pieces on top

  4. Close with another slice of bread and serve
