Toasted Sourdough Sandwich with Smoky Tempeh and Spicy Hummus
Ingredients
Smoky tempeh
- 1 block tempeh
- 1.5 tablespoons tomato paste
- 2 tablespoons soya sauce
- 1 tablespoon sriracha
- 1 tablespoon coconut sugar
- 2 tablespoons olive oil
Spicy chipotle white bean hummus
- 1 small head cauliflower, chopped into chunks
- 1 clove garlic
- 1 tin white beans
- up to 3 tablespoons chipotle paste
- 1 tablespoon apple cider vinegar
- 0.25 cup olive oil plus 1 tablespoon
- 0.25 cup oat milk
- smoked salt to taste
Preparation
Smoky tempeh
Cut the tempeh into pieces.
Mix the marinade ingredients and add the tempeh.
Marinate for 30 minutes.
Roast at 180°C for 30 minutes or pan fry.
Spicy chipotle white bean hummus
Roast the cauliflower and garlic with 1 tablespoon oil and salt until done.
Add to a food processor with the remaining ingredients, starting with 2 tablespoons chipotle paste, 0.5 tablespoons apple cider vinegar, and 2 teaspoons smoked salt.
Blend to form hummus.
Taste and adjust sour, spicy, or salty flavors as desired.
Sandwich assembly
Toast the sourdough bread.
Spread the hummus on the bread.
Add the smoky tempeh pieces.
Assemble the sandwich and serve.
