Vegan Cookie Dough Cups

Ingredients

Cookie dough

  • 1/2 cup chickpea flour
  • 1/4 cup coconut flour
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tbsp almond butter
  • 1 tbsp honey
  • 2 tbsp almond milk

Chocolate

  • 150g dark chocolate
  • 2 tbsp coconut oil

Preparation

  1. Melt the chocolate in a bowl and stir in the coconut oil.

  2. Line a 2x3 cupcake tin with paper or silicon cupcake cases and fill the bottom with half the melted chocolate. Leave to set in the freezer.

  3. Mix all the cookie dough ingredients in a bowl to achieve a dough-like consistency.

  4. When the base chocolate is set, divide the mixture into roughly 6 tablespoons and squash down on top of the set chocolate.

  5. Pour the remaining melted chocolate evenly on top of the cups and put back in the fridge or freezer to set.
