Vegan Gnocchi with Mushrooms and Spinach
Ingredients
- 200g cooked gnocchi
- 1 clove minced garlic
- 1 teaspoon vegan butter
- 1 small red onion
- 200g sliced mushrooms
- 1/2 teaspoon black pepper
- salt to taste
- 200g spinach
- 1 or 2 handfuls of pine nuts
Preparation
To make this easier, buy ready-to-cook gnocchi pasta from your local grocery store.
Cook 200g of gnocchi according to package instructions.
While the gnocchi is cooking, heat a pan with 1 teaspoon of vegan butter.
Stir fry and sauté the mushrooms, onions, and garlic until softened.
Add the spinach and pine nuts, cooking for a few minutes until the spinach wilts, ensuring spinach is added after the other ingredients are partially cooked.
Add the cooked gnocchi to the pan, mix well, and cook for a few more minutes until the gnocchi has a golden brown roasted look.
