Vegan Gnocchi with Mushrooms and Spinach

Ingredients

  • 200g cooked gnocchi
  • 1 clove minced garlic
  • 1 teaspoon vegan butter
  • 1 small red onion
  • 200g sliced mushrooms
  • 1/2 teaspoon black pepper
  • salt to taste
  • 200g spinach
  • 1 or 2 handfuls of pine nuts

Preparation

  1. To make this easier, buy ready-to-cook gnocchi pasta from your local grocery store.

  2. Cook 200g of gnocchi according to package instructions.

  3. While the gnocchi is cooking, heat a pan with 1 teaspoon of vegan butter.

  4. Stir fry and sauté the mushrooms, onions, and garlic until softened.

  5. Add the spinach and pine nuts, cooking for a few minutes until the spinach wilts, ensuring spinach is added after the other ingredients are partially cooked.

  6. Add the cooked gnocchi to the pan, mix well, and cook for a few more minutes until the gnocchi has a golden brown roasted look.
