Crispy Vegan Gnocchi with Garlic Mushrooms
Ingredients
- 300 g gluten-free gnocchi
- 1 red onion
- 1 garlic clove
- 250 g mushrooms
- 2 tbsp olive oil
- salt and pepper
Toppings
- pine nuts
- garlic basil parsley pesto
- fresh basil or other herbs of choice
- nutritional yeast flakes
Preparation
Prepare homemade gnocchi using the linked recipe or use store-bought gnocchi, then peel the onion and cut it into strips.
Peel the garlic and chop it.
Clean the mushrooms and slice them.
Heat up oil in a pan and roast the gnocchi for about 5 minutes on each side.
Add the garlic, onions, and mushrooms and roast for 5-10 more minutes until golden brown and crispy, then season with salt and pepper.
In the meantime, toast the pine nuts in another pan without oil.
Serve the roasted gnocchi with pesto and sprinkle with toasted pine nuts, fresh basil or other herbs, and nutritional yeast flakes as desired.
