Brown Rice Bowl

Ingredients

  • 1 red onion finely chopped
  • 1 garlic clove finely chopped
  • 1 chilli finely sliced
  • 2 tbsp vegan butter
  • pinch of salt
  • 1 block smoked tofu, finely chopped
  • 300g 2 1/2 brown rice
  • 200g 1 1/2 cup spinach, chopped

Preparation

  1. Combine all the the ingredients, spinach, garlic, chilli, and red onion in a saucepan

  2. In the meantime season the tofu with salt and garlic granules

  3. Then preheat frying pan and fry tofu until browned, then remove from frying pan and transfer to saucepan with other ingredients in saucepan adding the rice with enough water to cover all ingredients

  4. Add butter and pinch of salt and keep on a medium heat until rice is cooked

  5. Then served
