Quick and Easy Vegan Tikka Masala Bowl

Ingredients

  • Cooked rice (leftover rice works well)
  • 1-2 tbsp oil
  • 1 minced garlic clove
  • 1/2 diced red onion
  • Approx. 250g vegan chicken pieces or tofu
  • 1/2 can chickpeas
  • 1/2 package tikka masala spice mix
  • Approx. 350ml crushed tomatoes
  • 200ml vegan creme fraiche
  • Green peas
  • Salt and pepper to taste
  • Peanuts, diced (for topping)

Preparation

  1. Cook the rice or use leftover rice to save time.

  2. In a pan, heat 1-2 tbsp of oil. Add the minced garlic and diced red onion. Sauté until fragrant.

  3. Add the vegan chicken pieces or tofu along with the chickpeas to the pan. Cook until they start to get crispy.

  4. Sprinkle the tikka masala spice mix over the mixture and add the crushed tomatoes. Pour in the vegan creme fraiche and add the green peas. Mix everything together.

  5. Season the mixture with a little salt and pepper. Let it simmer for 5-10 minutes to allow the flavors to blend.

  6. While the mixture is simmering, boil the green peas separately.

  7. Dice the peanuts for topping.

  8. Combine the cooked rice, the tikka masala mixture, boiled green peas, and diced peanuts in a bowl.

  9. Mix everything together and enjoy your flavorful and nutritious Vegan Tikka Masala Bowl!
