Bbq Oumph! Chilli with Homemade Tortilla Chips
Ingredients
- 1 red onion
- 200g @eat_oumph pulled BBQ
- 400g crushed tomatoes
- 1 tbsp tomato paste
- 1 tbsp soy sauce (Japanese)
- 2 tbsp stevia ketchup
- 1 tomato
- 1/2 red bell pepper
- 1/2 can chickpeas
- 1/2 can black beans
- Salt and pepper
- Oil
- Tortilla bread for nachos
- Rice
- Water (if necessary)
- Sweet corn (optional)
Preparation
Cook the rice according to the instructions.
In a pot, add 2 tbsp of oil and fry the diced onion until browned.
Add the Oumph! pieces and the bell pepper, and fry until the BBQ pieces have defrosted.
Stir in the crushed tomatoes, soy sauce, ketchup, tomato paste, salt, and pepper. Simmer for 10 minutes.
Add the diced tomato, chickpeas, and black beans. Simmer for another 5-8 minutes.
Taste test and adjust seasoning if needed.
Prepare the tortilla chips: Cut the tortilla into chip shapes, place them on a baking tray, drizzle with oil, and sprinkle with salt. Bake in the oven at 200°C for 5-6 minutes or until crispy.
Serve the BBQ Oumph! Chilli with rice, tortilla chips, and optionally some sweet corn.
