Vegan Red Lentil and Tomato Curry
Ingredients
- 1 large onion, diced
- 4 cloves garlic + 1 tbsp ginger, minced
- 2 large carrots, diced
- 1/2 tsp each: ground turmeric, ground cumin, paprika, red chili flakes
- 3 tbsp red / yellow curry paste
- 1/2 cup tomato paste
- 1 cup dry red lentils, rinsed and drained
- 1 14-oz can coconut milk (lite or full-fat)
- 2 cups water or vegetable stock
Preparation
In a large pot, sauté the onion, garlic, ginger, and carrots for 5 minutes on medium heat.
Mix in spices, curry paste, and tomato paste.
Once fragrant, stir in the lentils and veggie stock.
Cover the pot and let simmer on low heat.
Once the carrots and lentils are tender (about 7-8 minutes), mix in coconut milk and let cook for 5 more minutes before serving.
