Wonderful Potato Bites
Ingredients
- 800-900g flour (maybe less, maybe more)
- salt, pepper
- 1ts nutmeg
- 1tb olive oil
- 2tb starch
- optional:
- 1 beetroot
- 2 handfull spiach
Preparation
Peel the potatoes and boil them until they're soft (better overcook than undercook!).
Drain, let them cool down
Puree the potatoes
Spice with salt, pepper and nutmeg
Add the flour bit by bit and knead until smooth, add more if needed
Dough should not be to wet so that you can form it but also not to dry, if it stops sticking to your pot it should be fine)
Now seperate your dough into sections and add your colour (step is optional)
For the red gnocchis peel the beetroot and juice it in a juicer or use cooked beetroot and puree it with your gnocchi dough, add more flour if needed
For the green dough puree the spinach with your dough
Form rolls of dough then cut them into small pieces and make a grid on top of the gnocchi with a fork (dont do all of them at once ,do the next step and then come back to this step)
Bring a large pot of water to a boil
Start with a test gnocchi
Let it cook for about 3 minutes, it is ready when it swims on the surface
If the test gnocchi is too soft, add more flour to the dough
Form the rest of your gnocchis
Cook the rest of the gnocchis
Then heat up oil in a pan and fry the gnocchis crispy golden
Serve with a nice tomato sauce, minimal with sage an olive oil or anything else you like with it
