Wonderful Potato Bites

Ingredients

  • 800-900g flour (maybe less, maybe more)⁣
  • salt, pepper⁣
  • 1ts nutmeg⁣
  • 1tb olive oil⁣
  • 2tb starch⁣
  • optional:⁣
  • 1 beetroot⁣
  • 2 handfull spiach⁣

Preparation

  1. Peel the potatoes and boil them until they're soft (better overcook than undercook!).⁣

  2. Drain, let them cool down⁣

  3. Puree the potatoes⁣

  4. Spice with salt, pepper and nutmeg⁣

  5. Add the flour bit by bit and knead until smooth, add more if needed⁣

  6. Dough should not be to wet so that you can form it but also not to dry, if it stops sticking to your pot it should be fine)⁣

  7. Now seperate your dough into sections and add your colour (step is optional)⁣

  8. For the red gnocchis peel the beetroot and juice it in a juicer or use cooked beetroot and puree it with your gnocchi dough, add more flour if needed⁣

  9. For the green dough puree the spinach with your dough⁣

  10. Form rolls of dough then cut them into small pieces and make a grid on top of the gnocchi with a fork (dont do all of them at once ,do the next step and then come back to this step)⁣

  11. Bring a large pot of water to a boil⁣

  12. Start with a test gnocchi⁣

  13. Let it cook for about 3 minutes, it is ready when it swims on the surface⁣

  14. If the test gnocchi is too soft, add more flour to the dough⁣

  15. Form the rest of your gnocchis⁣

  16. Cook the rest of the gnocchis⁣

  17. Then heat up oil in a pan and fry the gnocchis crispy golden⁣

  18. Serve with a nice tomato sauce, minimal with sage an olive oil or anything else you like with it⁣
